Cod and haddock in our own beer batter, dropped when you order. Maris Pipers cut in the shop each morning and fried twice. There is a wait — that is what fried to order means.

Filtered daily and changed on a schedule, not when it looks bad. Old oil is what makes a chippy taste like a chippy shouldn’t.
Behind the counter
Twenty-five years at the same range. Long enough to know a batter by the sound it makes, and to know that not one of the shortcuts is worth taking. Four steps, every order, the same as they were on day one.
Potatoes come in whole, get cut in the shop, and go through a first low fry to cook the middle.
The fillet is floured and dipped as the order lands, so the batter is still wet when it hits the oil.
Fish and chips go in separately at their own temperatures. Chips get a second, hotter fry for the crust.
Salted, vinegared unless you say otherwise, wrapped, and handed over while it is still too hot to hold. Not bagged and left.
